Two surfaces, two tools. Baked-on carbon on a baking steel needs metal. Enamel needs anything but. Most care kits ignore the difference and give you one scrubber for everything — which is how enamel gets scratched and steel stays dirty.

The chainmail — for baking steel and bare cast iron

Rings of 316 stainless steel, linked so the mesh flexes flat against the surface and gets into a pitted, well-used steel. It lifts carbonised flour and burnt cheese without you soaking anything overnight, and without soap stripping a seasoning you spent months building.

316 rather than the usual 304: the added molybdenum resists salt and acid corrosion, so the rings don't pit or leave rust freckles after washing a salty pan. The silicone backing gives you something to actually grip — chainmail alone is a handful of wet metal.

The wooden brush — for enamel and everything delicate

Stiff natural bristles on a wooden handle. This is what you reach for on an enamelled Dutch oven, a glazed baker, or anything with a coating — where a metal scrubber would dull the finish permanently. Warm water, a little mild soap, and the bristles get into the corner where the wall meets the base.

Which tool where

  • Chainmail: baking steel, pizza steel, bare or seasoned cast iron, stainless pans, cast-iron grill grates
  • Wooden brush: enamelled cast iron, ceramic, glazed stoneware, non-stick, anything coated

Never use the chainmail on enamel or non-stick. That's what the brush is for.

In the set

  • Chainmail scrubber — 316 stainless rings, silicone backing
  • Wooden brush — natural bristles, wooden handle

Care

Rinse both after use and let them dry. Hang the brush bristle-down so water doesn't sit in the head. Rinse and shake the chainmail, then hang it up.

FAQ

Will the chainmail scratch my enamel?

Yes, it can dull or scratch enamel — that's exactly why the brush is in the set. Use metal on bare metal, and the brush on anything coated.

Do I need soap?

A light soap wash is fine when something needs it, but avoid heavy detergent on seasoned cast iron. For everyday baked-on carbon, hot water and the chainmail are usually enough.

Can I use it on stainless pans?

Yes. The chainmail is intended for stainless and bare cast iron as well as baking steel.
