Why cast iron for bread
Bread needs a burst of trapped steam and steady, high heat in the first minutes of the bake. A heavy cast iron pot with the lid on holds both, which is what gives a loaf its spring, its ear and its blistered crust. The same mass that makes it slow to heat makes it steady once it's there.

Care
The pot is uncoated cast iron, so treat it like any bare cast iron: season it before the first bake, dry it thoroughly after washing, and wipe a thin film of oil over it before it goes away. It will darken with use — that's the seasoning building, not damage. The banneton should be brushed out and air-dried, never soaked.
FAQ
Does the lid really work as a skillet?
Yes. The lid is cast iron with its own handle and can be used as a shallow pan for searing, frying and finishing.
Will it work on induction?
Yes — cast iron works on induction, gas, electric and in the oven.
Is the pot pre-seasoned?
It is non-coated cast iron, so season it before the first use and re-oil lightly after each wash. The seasoning improves with every bake.
Do I need a separate banneton or lame?
No. Both are in the box, along with the sling, scraper, whisk, sifter and storage bag.
