Two shapes, one kit

The 23cm round takes roughly 750g of dough for a boule. The 25cm oval suits batards and longer loaves. Proof one of each, or bake the shape you feel like.

Why rattan, not plastic

Hand-woven cane wicks moisture away from the dough, so the surface stays dry enough to hold its shape and take a clean score. Used bare and well floured, it leaves the spiral rings that give a sourdough loaf its bakery look. The cotton liners are reversible: bare rattan for rings, lined for high-hydration dough that would otherwise stick.

Your first bake

1. Dust the banneton generously with rice flour
2. Place the shaped dough seam-side up
3. Cover and cold-proof in the fridge, 8–12 hours
4. Flip onto the silicone sling
5. Score with the lame, then lift the sling into a hot Dutch oven
6. Bake, cool, and store the loaf in the linen bag

Care

• Brush the rattan out after each use — never soak it
• Wash liners and the linen bag in cold water, air-dry
• Silicone slings are dishwasher-safe
• Replace the lame blade when it dulls; four spares are included

FAQ

Do I need to use the liner every time?

No. Use the banneton bare, well dusted with rice flour, for the classic spiral rings. Use the liner for wetter doughs that would stick.

Will the sling fit my Dutch oven?

The slings are sized to the two bannetons in this set and have long handles so you can lower the dough in without reaching into a hot pot.

Can I proof two loaves at once?

Yes — that's what the round and oval are for. Both fit a standard home fridge shelf.

How do I clean rattan?

Brush out dry flour and dough with the bamboo brush and let it air-dry. Soaking warps the cane and encourages mould.
