Sunday Morning Sourdough Pizza in a Cast Iron Skillet

The Formula

- 100g Bread Flour
- 20g Active Sourdough Starter
- 2g Salt
The Sauce & Toppings
- Canned Whole Peeled Tomatoes (Hand-crushed)
- Fresh Rosemary
- Salt & Black Pepper to taste
- Shredded Mozzarella Cheese
- Olive Oil
- Fresh Basil Leaves (For garnish)
The Process
1. Prep the Dough
Mix your starter, water, flour, and salt. Knead until smooth and let it undergo bulk fermentation until doubled. For the best flavor, let it cold-ferment in the fridge overnight. When you're ready to bake, gently roll the dough into a ball and press from the center outward until it reaches the size of the skillet.
2. The 5-Minute Par-Bake
Preheat your Kneva Dutch Oven to a roaring 250°C (480°F). Carefully lay the stretched dough onto the skillet. Cover the skillet with the Dutch oven pot and bake the naked dough for exactly 5 minutes. This crucial "par-bake" step ensures that the center of your crust cooks through and becomes crispy, rather than turning soggy under the weight of the sauce.
3. Top It Off
Carefully remove the covering pot from the oven.
- Spread a generous layer of your hand-crushed tomatoes.
- Top with a mountain of shredded mozzarella cheese, followed by a sprinkle of salt and a drizzle of olive oil.
4. The Final Bake
Return the uncovered skillet to the hot oven and bake for another 10 minutes. The high heat will melt the cheese to bubbly, golden-brown perfection while perfectly finishing the crust.
The Result
