How to Stretch Pizza Dough for Beginners | KNEVA Classic Premix

KNEVA Classic Premix baking guide · Beginner technique

A good pizza base starts with relaxed dough and gentle hands. Press from the centre, keep a slightly thicker rim, and let the dough stretch a little at a time. You do not need to toss it in the air.

The dough shown in the video

  • KNEVA Classic Premix and 175 ml water.
  • The batch makes two dough balls; the video shows one.
  • The dough was cold fermented overnight.

This lesson starts with fermented dough, ready for shaping.

1. Let the dough relax

Keep the second ball covered while you work on the first. If refrigerated dough feels firm or resists opening, leave it covered at room temperature until more pliable. Judge how it handles rather than forcing a fixed warm-up time.

2. Use a light dusting of flour

Dust your hands and a clean worktop just enough to prevent sticking. Turn the dough gently and brush away loose excess before topping or transferring it. More bench flour is not a substitute for relaxed dough, and a thick coating can leave a floury base.

3. Press from the centre, leaving a rim

Set the dough down and press with the pads of your fingers, working from the middle towards the outside. Turn it a little between passes. Leave the outer edge slightly thicker instead of flattening every bubble. Aim for an even centre; a slightly oval first pizza is fine.

4. Finish with a gentle stretch

Keep the dough supported on the worktop for as long as possible. When it opens easily, drape it over the backs of your knuckles, as shown in the video. Let its weight help it widen while you rotate it gently. Support the thicker parts and avoid pulling a thin patch with your fingertips. No airborne toss is needed.

5. Top lightly and transfer promptly

Place the stretched base on a prepared peel or suitable baking surface before adding toppings. A heavy layer of wet sauce makes a delicate centre harder to handle. Keep the rim clear. If using baking paper, follow its stated temperature limit.

The demonstration pizza was baked on KNEVA Oven Baking Steel at 275°C for 8 minutes. That is the result for this bake; thickness, toppings and ovens affect the time. Fully preheat your baking surface and use oven gloves when handling hot equipment.

When the dough does not cooperate

  • It springs back: cover it, wait about 15 minutes, then resume gently. Repeated hard pulling makes shaping more difficult.
  • It starts to tear: stop stretching that patch. Set it down, gently close a small hole and let it rest before continuing.
  • It sticks: lift carefully with a dough scraper and add a small dusting beneath the sticky spot.
  • The middle is very thin: stop enlarging it. A smaller intact pizza is easier to top and launch.
